Chicken and Spanish Rice Bowls with Black Beans and Wild Oats Tortilla Chips

Living Frugal with Erika was contacted by Wild Oats recently to do a review. We were sent a variety of items and told that we could create a recipe with these items! This is one of the delicious ways that we used the Wild Oats products for our family! This delicious Chicken and Spanish Rich Bowls with Black Beans and Wild Oats Tortilla Chips has quickly been added to the favorite menu. It only takes about 30 minutes from start to finish and that is a great thing for our family. This was made for only four people this time but of course you can double or even triple the recipe for a bigger crowd! Check out this simple recipe and let me know what you think!

Chicken and Spanish Rice Bowls with Black Beans and Wild Oats Tortilla Chips

Ingredients Needed:

  1. 4 Chicken Breast (1 Chicken Breast Per Person)
  2. 1 Bag of Wild Oats Tortilla Chips
  3. 2 Cans of Spanish Rice
  4. 2 Cans of Black Beans
  5. Shredded Cheese
  6. Fajita Seasoning

Optional Items:

  1. Sour Cream
  2. Salsa

This recipe can be altered in so many different ways so that you can customize this for each person. Sometimes the kids like to skip meat during meals and these bowls are still very filling even without the chicken. We also used the leftovers to make burritos the next day!

Directions:

  1. Slice the chicken breast into bite sized chunks
  2. Cook chicken thoroughly and then add in fajita seasoning according to the package
  3. Heat up one can of Spanish Rice in a separate pan
  4. Heat up one can of Black Beans in a separate pan
  5. Once the chicken and fajita seasoning is completed cooking, add the second can of Spanish Rice to the chicken

After everything had completed cooking and heating, we set up the kitchen with different bowls so that everyone could make their own. My Chicken and Spanish Rice Bowl is pictured above. I layered Wild Oats Tortilla Chips, Black Beans, Spanish Rice, Shredded Cheese, and finally chicken.
